Busy day

Having my first coffee and reading updated info about the musical line up for Savor San Pedro food Festival. A bit slow this morning woke at about 6:50 good thing I do not have far to go to work ha ha.

10:29am
Internet is just a mess this morning - making it very difficult to get things done as easily as they should be. I think mercury must be in retrograde or something cause everything feels jammed up. Been Jo who was texting from Miami airport. They are on second leg of and will be landing in Belize city around 2:20pmcst. It is like pulling teeth trying to figure out meeting up with them later. We are in a work day so would be a bit helpful to figure out rough timing of things since we will have their golf cart.

Break time - before I go Crazy.

Picked up- car - went grabbed video Paul and headed to town to do errands. Got groceries - some larger plastic glasses and a new broom. Saw lots of people - everyone out enjoying the sun. No word from Erin and Jo yet. Pics finally going up - Upload window kept saying they were up when they weren't.



Got a ride with Sharon and her lovely parents.

4:24pm
Hanging out with Video Paul on the balcony. It is a gorgeous day - hot sunny and perfect - a plus of internet acting up as it made me walk away from Lt and go enjoy the day.

Got the call they are at Pedro's so Video Paul is coming with to pick them up. Talk about excitement 2 girls escaped from Canadian winter and landed in San Pedro on a hot sunny Wednesday afternoon.

Way to save $31
Prep time: about 10 minutes

Ingredients:

1 1/2 c. unsalted roasted peanuts
1 tbsp. peanut oil
Utensils:

food processor
bowl
mixing spoon
storage container
measuring cups and spoons
Directions:

For smooth peanut butter:

Mix the peanuts with the peanut oil, and pour the mixture into the food processor.
Process the mixture until it's very smooth.
Store your smooth peanut butter in a sealed container in the fridge. It will be good for 2 weeks.
For chunky peanut butter:

Take about 1/4 cup out of your 1 1/2 cups of peanuts and set them aside.
Mix the rest of the peanuts with the oil, and pour the mixture into the food processor.
Process the mixture until it's very smooth, then stir in the peanuts that you had set aside.
Process a few seconds more to create the chunks in your chunky peanut butter.
Store your chunky peanut butter in a sealed container in the fridge. It will be good for 2 weeks.

Thanks Colin unfortunately I am not the food processor type. I will definitly pass the info along though as I have friends who are.

Chunky preferred mystery boy but anything will be fine.

Peanut butter can't really be that expensive? Can it?
I'll have to bring some down with us in a couple of weeks. It's a staple in our diet.

Peter it can be a bit cheaper at some stores but still expensive by comparison. Nuts and cereal are good things to bring down that can be costly here.
